Preparation of the dough –

  1. Take half a teaspoon of yeast, a little salt and add it to three tablespoons of warm water.
  2. Take a large bowl with flour in it. Add water to it until all the flour comes together. And keep for 30 min to rest.
  3. Then add the yeast mixture to it and knead the dough well. Take the dough from beneath from one side and upside down it to the other side of the dough 4-5 times. 
  4. Pad the dough with a little olive oil and let it rest for half an hour to double its size. The dough is ready now.

Baking/ Preparation of pizza base-

  1. Cut the prepared dough into pieces according to the size of the ball required for making a pizza.
  2. Roll a single ball and make it flat with gentle hands and check the thickness for its proper baking.
  3. Bake it for 10-15 min at 500°F.
  4. Poke the dough before baking so that other flavors can penetrate it.

Toppings for the dish-

  1. To the baked flat bread add the tomato sauce layer.
  2. Add sauces, vegetables, and cheese as per your taste.
  3. Saute the vegetables/ sausage before adding it to the bread.

  1. Prepare a mixture of cheese with milk and cream.
  2. Separate egg yolks from egg whites.
  3. Beat the egg whites until creamy peaks appear then add sugar to it slowly. Egg yolks to it and blend well.
  4. To this add flour, and melted butter and mix well.
  5. Use an electric blender and add the creamy mixture to it. 
  6. Place the prepared batter, season it with sesame seeds, and bake it.

-Quesadilla burger

  1. Add beef, garlic, jalapenos, chili powder, and salt to a bowl and mix well. Make patties.
  2. Fry the patties in a pan with oil from both sides for about 5 min each.
  3. Take a skillet, add oil to it, keep it in low flame then add tortillas in it and cook it until it shows heat pockets.
  4. Assembling – Take the tortilla and layer it with lettuce, then mayonnaise, then patties, sauce, and other toppings such as onion. and tomato slices.

  1. Prepare a tomato sauce.- Puree onion, chili, salt, and tomatoes and heat it in a pan with oil, add water to get the correct consistency.

  3. Preparation of tortillas – fry the tortillas in vegetable oil until it turns golden.

Chilaquiles is a Mexican traditional dish that is served as breakfast or brunch. It is a comfort food and also good as a hangover dish.

Mexican food has a unique flavor to its food. It is popularly said that the sense of sazon makes the food a delicacy. The chef’s sense of acidity, seasoning, traditional cooking methods, and use of new technology makes the food so unique and lovable.

The word chilaquiles comes from the Nahuatl language, meaning chilies and green probably because chilaquiles can be prepared in green or red sauce.

How to prepare Mexican Chilaquiles?

It was introduced in a Spanish cookbook by Encarnacion Pinedo with a full recipe.

Ingredients

  1. Tortilla chips
  2. Chopped onion, 
  3. Tomato
  4. Jalapenos, 
  5. Vegetable oil,
  6. Salt,
  7. Garlic
  8. Vegetable or chicken broth.

 Prepare the salsa by cutting down all the vegetables into small pieces or by from the market.

If pan roasted – Blister the tomatillo in a skillet. Oil it and flip it until it turns brown.

If boiled – use a saucepan. Place tomatillo and water in it. Cover it and boil for 5 min.

To a pan add the tomatillo with the seasoning that is a puree of onion, garlic, lime, cilantro, and chili pepper. Season it with salt.

  • Coat the tortillas chips with salsa

In a pan add the sauce and then the tortilla chips. Cook it for around 3 min. Add salt for the taste.

  • Preparation of the toppings

-Fried or scrambled eggs.

-Shredded chicken, pork, beef, etc.

What is Tostada?

Tostada is a Mexican snack like tacos which is served with a layer of bean paste and various toppings giving it a mini pizza look. It is mainly a toasted tortilla given as an appetizer or side dish similar to tortilla chips (corn tortillas).   It is available as nachos in supermarkets.

The stale tortilla is repurposed as tostada by frying or baking it into chips and then putting a layer of bean paste and then other meat/ proteins and toppings.

It was invented in Oaxaca as Mexican flat round corn tortillas stacked with meat, vegetables, cheese, and beans.

How to Prepare Tostada?

Ingredients that are used to prepare a tostada –

  1. Olives

  • Preparation of tortillas –

Baking:

Oil the tortillas using a brush or a spray. Keep it flat on a baking sheet at 415°F and flip it when the color turns brown and it looks crispy.

Frying

Dry the tortillas in the oven for 10 min at 250°F. Add oil to a pan and add tortillas to it one by one when the oil is sizzling hot. Take it out on a paper towel for extra oil absorption after it becomes crunchy and golden. Sprinkle salt in it and warm it in the oven at 250°F before serving.

  • Preparation of bean paste –

Add warm and refried beans to a frying pan. In the case of canned beans, wash it with cold water first. 

Add water to the pain and mesh the beans to prepare a paste. Add salt, bacon fat, and cheese to it. Give it a creamy consistency.

  • Preparation of toppings 

Cut vegetables required for toppings. Prepare sauces required. Keep ready the chopped meat and cheese.

Saute the vegetables with onion, salt, and other flavors.

Tender the meat and add the required taste to it.

  • Assembling of tostada –

To the warm, dry tortilla chips add a base layer of warm refried bean paste first for the other toppings to hold on to it.

Then add prepared meat and vegetables to it.

Add olive, cheese, lime, etc to it and serve it.

Storage –

  • You can store Tortilla chips in a ziplock bag for 48 hrs after frying or baking. But the freshly fried/ baked ones are best to serve for their crunchiness.
  • You can store the toppings for a long time in an airtight container in the refrigerator.

  • Narendra Modi wakes up at 5 a.m. and after fresh n up he does yoga for at least 40-45 minutes. Yoga and meditation are a must for Mr. Modi, without doing this he does not start his day. After that, he reads English and Gujarati newspapers.

For the preparation of menudo, we require the below ingredients

  1. Dried guajillo chili
  2. Cooked white hominy
  3. Cane sugar
  4. Minced garlic
  5. Onion 
  6. Mexican oregano
  7. Ground cumin
  8. Trip 
  9. Trotters
  10. Salt
  11. Water
  12. Coriander
  13. Lime
  14. Vinegar
  15. Broth

The recipe for menudo is as-

  • Soak blanched tripe in cold water / wash unbalanced tripe with cold water and remove the fat.
  • To boiling water add tripe and trotters and further boil it for 5 min and then drain it.
  • Add the braising liquid to the drained trip and trotters and simmer it for 3hr and cool it down to room temperature.
  • Drain it again and then brush off the trip and trotters. Strain the stock.
  • At 350° F keep the guajillo chiles for 5 min after removing their stems and seeds. Keep it in hot water for 15 min afterward.
  • Drain the chili blend with half of the stock and strain it. Add trip and trotters to it. 
  • Take canned hominy (wash with cold water)/ Frozen hominy about 3 cups in the pot and then add other ingredients like salt, garlic, and onion to it and simmer it for 1 hr. 
  • Serve the dish with lime, cilantro, and onion. Lastly, if kept overnight the flavors are enhanced.

The beef trip, broth, onion, hominy, lime, oregano, chilies, hot dog, green peas, and sun-dried resins.

The recipe- 

  1. Firstly, the pork is soaked in soy sauce and lime for 1 hr in the refrigerator.
  2. Garlic and onions are sauteed in a pan and pork is added to it and then fried until it becomes brown.
  3. Further, tomato sauce and then dried bay leaves are added to it. It simmers for 40 min.
  4. When the meat becomes tender garlic and ginger are added with sliced liver, vegetables Salt, and pepper.
  5. Serve it with or without using chilies.

Storage for the dish-

The dish must be kept in an airtight container or a bag.

  1.  Short-term storage –

The dish can be stored in the refrigerator for about 3 days for further use. It must be cooled before refrigeration.
