Ingredients: Chicken stock, chicken boiled & shredded, cabbage, onions, carrots, soy sauce, siracha or chilli oil, vinegar, pepper, garlic sauce, bell pepper, sugar, sesame oil, salt, egg, corn starch.
Step 1: Bring the stock to a simmer in a pot on medium heat. Add the vinegar, chilli garlic sauce, white pepper, brown sugar, sriracha sauce, regular soy sauce, dark soy sauce, and sesame oil.
Step 2: Check the Hot and Sour soup for salt; typically, the stock and soy sauces are enough to season it.
Step 3: Add the chicken, carrot, bell pepper, cabbage, and white portion of the spring onion.
Step 4: Water should be brought to a rolling boil. Then, while stirring the soup, gradually add the cornflour/cornstarch slurry (cornflour combined with water).
Step 5: Don’t add everything at once; stop when the soup has reached the consistency you prefer.
