Chole Kulche is a popular dish of India which is a flatbread with a stuffing of Spices potato, paneer, onion, cauliflower, etc that is prepared in a clay oven/ tandoor and served with imli/ tamarind chutney and chickpea/ chole.Â
It is a famous dish popularly found in Amritsar, Punjab and Delhi. It has also been rooted in Dubai due to the presence of Punjabi cooks there. Amritsari kulcha is a delight used as a breakfast meal.
Kulche originates back in mughal times. It is known that the cook/khansamah of Shah Jaha presented it to him and it was much appreciated. The story of popular das kulcha states it was prepared by Ram Das a cook of Maharaja Ranjit Singh at pre-partition times.

- Oil
- Butter
- Water
- All-purpose flour
- Wheat flour
- Salt
- Coriander leaves
- Mint leaves
Tamarind chutney preparation –
- Tamarind pulp
- Black salt
- Sugar
- Ginger
- Cumin powderÂ
- Garam masalaÂ
- Chili powderÂ
- Salt
What is the recipe for Chole Kulche?
Recipe to prepare chole/ which matar/ chickpea as Street style –
- Soak the chickpea for 4-5 in water.
- Drain the water and add the chickpea to the pressure cooker. Add salt, asafoetida, and clove to it.
- Cook it on low flame for 4 pressure whistles.
- Now take this to a casserole. Add garam masala, chat masala, cumin powder, and black pepper to it. Mix it well.
- Now add sliced ginger and chili to it. Add tamarind pulp to it. Simmer it for 10 min.
- Serve this in a bowl and add chopped coriander, onion, and tomato to it.
Amritsari plain kulcha –
- Mix all-purpose flour, wheat flour, and salt. Add butter or oil to it.
- Knead the dough well with water for 15 min.
- Prepare balls and shape them round with outward finger movements.
- Add coriander and mint leaves to its surface. Add filling.
- Semi-wet the bread for sticking in the tandoor and cook itÂ
- Add butter over it and serve with chole.

These are required to be chopped well enough in very small pieces or can be mashed. Spices and herbs can be added to it such as chili pepper/ green chili/black pepper etc.
Add the stuffings after preparation of the ball and then again roll as balls to prepare kulcha.
Recipe for tamarind chutney –
- Take a pan and add tamarind pulp to it. Add sugar and water to it. Cook it on high flame for 5 min until the melting of all sugar.
- Add all the spices to it.
- Cook it for 10 minutes more on low flame.
- Add resins or roasted muskmelon seeds if required.

You can store Chole Kulche for 2-3 days in the refrigerator in an airtight container or plastic wrap.
